Green Sauce (Salsa Verde) Recipe

• 1 c. parsley
• 3 anchovy fillets
• 1 small boiled potato, cool
• 1 small dill pickle
• 1 teaspoon salt
• 1 clove garlic
• 1 small onion
• 1 c. oil (olive)
• 2 tbsp. white vinegar (wine)
• 1/8 teaspoon pepper

1. This is an herb vinaigrette sauce.
2. Served with warm or possibly cool (usually boiled) meats.
