Tex Mex Stuffing Recipe
- 1/2 c. butter
- 2 med. onion, finely minced
- 1 c. minced celery
- 1 sweet green pepper, lg., seeded & finely minced
- 2 warm jalapeno peppers, seeded & finely minced
- 1/2 c. turkey giblet, finely minced
- 1/2 c. turkey liver, finely minced
- 1 clove garlic, finely minced
- 8 c. cornbread, crumbled
- 2 hard cooked Large eggs, coarsely minced
- 2 (8 ounce.) cans kernel corn, liquid removed
- 1 c. (more or possibly less) turkey or possibly chicken broth
- 2 teaspoon chili pwdr
- 1 teaspoon cumin pwdr
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tbsp. Accent
- Saute/fry onion, celery and pepper in a large skillet till softened.
- Stir in turkey giblets, liver and saute/fry 5 min.
- Combine cornbread, hard cooked Large eggs and kernel corn in a large bowl.
- Pour in broth, toss to moisten and add in sauteed vegetables and seasonings.
- Stuff turkey with dressing and roast according to your favorite recipe.
- Grease a shallow 3 qt baking dish.
- Bake covered in a preheated 350 degree oven for 45 min.
- Uncover the last 10 min for a nice crusty top.
- Yield: 10 c..
