Roasted Garlic & Parmesan Cauliflower
- 3 clove Garlic, minced
- 4 tbsp Olive oil
- 3 tbsp Grated Parmesan cheese
- 1 large head cauliflower, separated into florets and cut into 1/4 inch slices
- 1 Salt and pepper, to taste
- 1 tbsp Parsley flakes
- Heat oven to 400F.
- Put garlic and olive oil into a a bowl and heat in microwave for 15-20 seconds.
- Set aside.
- Place cauliflower slices in a foil-lined baking sheet and drizzle with oil and garlic mixture .
- Add parsley, sprinkle with parmesan cheese, and season to taste with salt and pepper.
- Toss to coat and add more olive oil and cheese if needed.
- Roast cauliflower, turning every 10 or 15 minutes, until the edges are nicely browned.
- Serve hot as a side dish.
