Roasted Garlic & Parmesan Cauliflower

  1. Heat oven to 400F.
  2. Put garlic and olive oil into a a bowl and heat in microwave for 15-20 seconds.
  3. Set aside.
  4. Place cauliflower slices in a foil-lined baking sheet and drizzle with oil and garlic mixture .
  5. Add parsley, sprinkle with parmesan cheese, and season to taste with salt and pepper.
  6. Toss to coat and add more olive oil and cheese if needed.
  7. Roast cauliflower, turning every 10 or 15 minutes, until the edges are nicely browned.
  8. Serve hot as a side dish.
