Persimmon Muffins Moderately Sweet Made with Pancake Mix

  1. Preheat the oven to 180C.
  2. Melt the butter.
  3. I used a super ripe persimmon that was almost as deeply red as a tomato.
  4. Peel the skin and cut out the seeds and the tough area around the seeds.
  5. Please refer to the Helpful Hints.
  6. In a bowl, add the mushy persimmon from Step 2, egg, and milk, and mix together well.
  7. Add the melted butter and continue mixing.
  8. Mix in the pancake mix to Step 3.
  9. Pour into the muffin cups.
  10. Top with a thin persimmon slice.
  11. Bake for 20 minutes at 180 degrees C.
