Chicken Vegetable Soup
- 2 (28 ounce) cans chopped tomatoes
- 1 (16 ounce) can kidney beans, drained and rinsed
- 16 cups chicken broth
- 2 cups cubed cooked chicken breasts
- 12 cup uncooked white rice
- 4 celery ribs, including leaves
- 2 large carrots
- 1 large onion
- 1 green pepper
- 6 large mushrooms
- 2 cups thinly sliced cabbage
- 1 cup snap peas
- 1 cup chopped broccoli
- 1 cup green beans
- 5 garlic cloves
- seasoning
- place all chopped ingredients in stock pot.
- season to taste with salt/pepper, sage, parsley,basil etc.
- let simmer for approximately 1 hour.
