Giardiniera My Way

  1. Place all chopped veggies into large glass bowl.
  2. Sprinkle with salt, stir well.
  3. Refrigerate for approximately 12 hours.
  4. Drain and rinse.
  5. Whisk remaining ingredients and add to veggies.
  6. Cover and leave at room temperature for 24 hours, stirring occasionally.
  7. After 24 hours, I refrigerate in mason jars.
