Caribbean Chicken
- 4 chicken breasts
- 2 tablespoons season salt
- 1 tablespoon onion powder
- 15 ounces peaches
- 15 ounces pears
- 3 tablespoons brown sugar
- 2 tablespoons butter
- 1 teaspoon dried basil
- tabasco habanero sauce
- 3 cups cooked white rice
- Make rice according to package directions.
- Jasmine rice worked the best so far for me.
- Pound out chicken breasts to 1/2 inch thickness, season both sides with season salt and onion powder.
- Place on grill.
- In sauce pan place butter to melt.
- Add brown sugar, peaches, pears and basil.
- Bring to a boil then simmer on meduim to medium high heat for 10 to 15 minutes.
- Place rice on plate, place chicken on top of rice and pour sauce with fruit on top.
- Add tabasco to taste.
