Foil Dinners
- 1 (15 1/2 oz.) can pineapple chunks, drained (reserve 1/2 c. liquid)
- 1 Tbsp. cornstarch
- 2 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 1 Tbsp. chicken flavor bouillon
- 3/4 tsp. ground ginger
- 4 skinned chicken breast halves
- 4 carrots, peeled and sliced
- several new potatoes
- In small bowl, combine juice, sugar, cornstarch, soy sauce, bouillon and ginger; mix well.
- You now need 4 large squares of heavy aluminum foil; spray them with Pam.
- On each square, place 1 piece of chicken.
- Divide pineapple and veggies equal; add with chicken, then divide the sauce over all.
- Fold and seal aluminum very tight.
- Place on hot coals.
- Watch closely; turn as needed. Should cook about 1 hour.
- Or, place on baking sheet in hot oven at 400u0b0 and bake for 1 hour.
