mint chocolate chip frosting
- 3/4 cup butter, softened
- 2 1/4 tsp vanilla
- 1 2/3 cup powdered sugar
- 1 pinch of salt
- 14 andes mint candies, chopped
- 3 4 drops green food coloring
- beat butter on low speed until creamy, about 3 minutes.
- add vanilla & beat 1 minute.
- gradually add powdered sugar & salt & beat another 3 minutes, until light & fluffy.
- add candies & food coloring, then beat another 2-3 minutes, until creamy & blended
- enough for 2 dozen cupcakes
