Porcupine Meatballs In Chili Sauce Recipe
- 1 1/2 teaspoon chili pwdr
- 1 1/2 teaspoon garlic salt
- 2 teaspoon molasses or possibly corn syrup
- 1/2 teaspoon grnd cumin seeds
- 1/2 teaspoon oregano leaves
- 5 c. tomato juice
- 1 pound lean grnd beef
- 1 teaspoon prepared mustard
- 1 c. quick cooking (UNCLE BEN'S®) rice
- 1/2 c. finely minced onion
- 1/2 c. finely minced peppers
- 1/2 c. finely minced celery
- 2 teaspoon salt
- 1/4 teaspoon grnd black pepper
- 1 egg
- To make sauce, combine chili pwdr, garlic salt, molasses, cumin, oregano, and tomato juice in large heavy pan.
- In large bowl, combine grnd beef, rice, onion, green pepper, celery, egg, mustard, salt and pepper.
- Blend well.
- Shape into meatballs about 1 inch in diameter.
- Place meatballs in sauce.
- Bring liquid to boil, reduce heat, cover and simmer 20 min or possibly till meatballs are cooked through.
- Turn meatballs in sauce once during cooking.
- Makes 4 servings.
- It is just as good without the pepper!
