Thai -Style Chicken With Coriander Mango Salsa
- 2 tablespoons oil
- 1 garlic clove, chopped
- 1 teaspoon ginger, grated
- 500 g chicken tenderloins, sliced
- 1 tablespoon light soy sauce
- 12 teaspoon light brown sugar or 12 teaspoon palm sugar
- 2 tablespoons sweet chili sauce
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 150 g hokkien noodles, fresh
- 12 bunch chinese broccoli
- 1 small red onion, finely chopped
- 14 cup coriander
- 200 g mangoes, finely diced
- 2 tablespoons red wine vinegar
- Cook the garlic and ginger for 1 minute.
- Add the chicken and brown for 4-5 minutes.
- Add the sugar, soy,chilli and fish sauces and lime juice.
- Simmer until the chicken is cooked.
- Cook the noodles in boiling water until tender.
- Drain, add to the pan ,along with the broccoli, and toss well.
- Serve with the Coriander Mango Salsa: combine all ingredients in a bowl and mix well.
