Pear Almond Cake
- 2 14 cups white flour
- 1 cup sugar
- 34 cup plain yogurt
- 2 teaspoons baking powder
- 14 teaspoon nutmeg
- 14 teaspoon salt
- 1 egg
- 12 cup vegetable oil
- 1 pinch vanilla powder
- 2 ripe pears (peeled and cut into 1 cm cubes)
- 2 -3 tablespoons slivered almonds, toasted
- 1 teaspoon lemon zest
- - mix the egg with sugar using an electric mixer.
- - add to it the vegetable oil and yogurt and continue mixing.
- - add baking powder, vanilla powder, lemon zest, salt.
- - then add the flour gradually and mix well.
- - add the cubed pears and mix only with a spoon.
- - pour the batter into a 8"x9" baking dish after spraying it with cooking spray.
- - sprinkle the toasted slivered almonds on top of the batter (the slivered almonds can be toasted by putting them in a heated pan without oil for 2-3 minutes until they become golden in color).
- Bake for 35 to 40 minutes at 200C , until the cake is springy to the touch, shrinks from the sides and a toothpick inserted into the center comes out clean.
- Let cool for 20-30 minutes on a wire rack, then slice and serve!
