Easy Parmesan Chicken
- 14 cup olive oil
- 2 -3 tablespoons lemon juice
- 1 cup parmesan cheese, grated
- 12 cup biscuit mix (I use Bisquick)
- 14 teaspoon pepper
- 4 -6 boneless skinless chicken breasts, flattened
- 2 tablespoons butter or 2 tablespoons margarine
- In a small bowl, mix the oil and lemon juice.
- In a separate bowl, mix the cheese, biscuit mix, and pepper.
- Dip the chicken in the oil mixture, then coat with the cheese mixture.
- In a large skillet, heat the butter over medium heat until hot.
- Fry the chicken until golden and done, about 5-8 minutes per side.
