Citrus Salmon

  1. Peel, section and medium dice: lemon, lime, orange and grapefruit.
  2. Mix first 7 ingredients together in a glass bowl; whisk in oil slowly.
  3. Set aside.
  4. Preheat oven to broil.
  5. Rub salmon filets with olive oil and salt and pepper.
  6. Broil 34 to 5 minutes on each side or until salmon flakes easily.
  7. To serve: stir remaining 5 vinaigrette ingredients into already combined vinaigrette mixture.
  8. Transfer salmon to serving plate.
  9. Spoon a portion of vinaigrette over each fillet and serve immediately.
