alligator bites
- 2 lb alligator meat cut into bite size pieces
- 1 1/2 cup buttermilk
- 1/3 cup cornstarch
- 1 cup flour (all purpose)
- 1 salt, cayenne pepper, and garlic powder to taste
- 1 oil enuff to pan fry or deep fry
- 1 dash smoked paprika to taste
- 4 large vine ripe tomatoes chopped
- 1 can tomato sauce 15 ounce
- 1 sugar, salt, black pepper to taste.
- 1 packages 12 ounces bacon cooked semi-crisp chopped
- marinate the alligator meat in 1 cup buttermilk overnight.
- mix the cornstarch and flour together add spices to the meat after removing from butter milk use flour and cornstarch mixture to cover meat dip into 1/2 cup buttermilk then dip into flour cornstarch mixture gently shake excessive flour mixture off put into hot oil.
- 350F Fahrenheit for deep fry good to use peanut oil unless you allergic to nut then try cotton seed oil mixed with 1/2part linseed oil cook usually till floating most of time it will be done.
- fry pan fry , medium high heat serve with rice and tomato gravey and fried corn bread .
- chop the tomatoes put into pot add can of tomato sauce add spices and add 2 tablespoons of bacon drippings and bacon.
- simmer to let thicken about 20 mins.
- you can substitute the rice for southern style grits or macaroni elbows.
- if grits or rice use like a gravey.
- if macaroni mix it after boiling the elbows all three of these are typically a true southern dishes.
