Grilled Garlic Potato Salad

  1. Preheat grill to medium-high heat.
  2. Place potatoes in 2-quart microwavable dish.
  3. Add 1/3 cup water; cover dish.
  4. Microwave on HIGH 5 min.
  5. ; drain.
  6. Meanwhile, cut 1/3 inch off top of the head of garlic (not the root end).
  7. Place on sheet of foil; drizzle with 2 Tbsp.
  8. of the dressing.
  9. Wrap garlic in foil, sealing ends tightly.
  10. Insert potatoes on skewers; place on grill grate along with the garlic.
  11. Brush potatoes with some of the remaining dressing.
  12. Grill potatoes and garlic for 10 to 15 min.
  13. or until potatoes are tender, turning the potatoes frequently and brushing with the remaining dressing.
  14. Remove potatoes and garlic from grill; cool.
  15. Remove 4 cloves from the head of garlic.
  16. Remove pulp from the skins (see Tip below); mix with the mayo and mustard in large bowl.
  17. Add potatoes and celery; mix lightly.
  18. Cover.
  19. Refrigerate several hours or until chilled.
  20. Wrap remaining roasted garlic tightly and refrigerate for another use.
