Death by Chocolate Cake- SANE Style

  1. Preheat oven to 350'F/177'C
  2. Line the bottom of 2 round 8" x 2" cake pans with parchment paper.
  3. Grease sides of pan and top of parchment paper with butter.
  4. Beat eggs (in a bowl large enough to hold all of the ingredients).
  5. Add xylitol and coconut milk and combine.
  6. Add all of the other ingredients and combine well.
  7. Divide batter evenly into prepared pans.
  8. Bake for 28-35 minutes, until cake is just set (the center may still be a little soft).
  9. Slightly underbaking is better than overbaking.
  10. Combine the last 3 ingredients (coconut cream, xylitol, & vanilla bean powder) to make the frosting.
  11. Let cake cool completely before frosting.
