Chicken Tamale Casserole
- 3 cups shredded rotisserie chicken Whole Foods 1 lb For $3.99 thru 02/09
- 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
- 3 Tbsp. unsweetened cocoa powder
- 4-1/2 tsp. chili powder
- 2 tsp. garlic powder
- 1-1/2 tsp. ground cumin
- 1 pkg. (8.5 oz.) corn muffin mix
- 3/4 cup BREAKSTONE'S or KNUDSEN Zesty Blends Chipotle Sour Cream, divided
- 1 cup KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA
- Bring first 6 ingredients to boil in saucepan; simmer on medium-low heat 20 min.
- or until thickened, stirring frequently.
- Spread onto bottom of 8-inch square baking dish sprayed with cooking spray.
- Heat oven to 400 degrees F. Prepare muffin batter as directed on package.
- Stir in 1/2 cup sour cream; spread over chicken mixture.
- Top with cheese.
- Bake 20 min.
- or until golden brown.
- Serve topped with remaining sour cream.
