Garita Cafeteria's Charsiu (Stewed Pork)
- 1 roast Pork block
- 1 piece Ginger
- 1 Japanese leek
- 150 ml Soy sauce
- 150 ml Mirin
- 150 ml Sake
- 1 clove Garlic
- 2 tbsp Sake
- 1 1/2 tbsp Sugar
- Tie the pork block with kitchen twine if it is not already tied up.
- Slice the ginger.
- Thickly slice the Japanese leeks, or slice diagonally.
- Grate the garlic.
- Lightly rub the meat with the sake for prep to remove the odor, and rub in the sugar.
- Then, rub in the garlic, and the prep work is done.
- Heat lard in a stain pot or Dutch oven, and cook the meat on both sides, add soy sauce, sake, mirin, Japanese leeks, and ginger into the pot, cover with a lid, and stew for 30 minutes.
- The meat was not fully submerged in the sauce, so I flipped it over several times.
