Sweet Potato Oven Fries
- 2 md. sweet potatoes, scrubbed
- Nonstick vegetable oil spray
- Salt
- 2 tbsp. flat leaf parsley, washed, spun dry and finely chopped
- 1 tsp. garlic, minced
- 1 tsp. lemon zest, freshly grated
- Black pepper, freshly ground
- Preheat the oven to 400F.
- Cut the potatoes crosswise 1/4-inch thick.
- Spray a baking sheet with the nonstick vegetable oil spray and arrange the potatoes in one layer.
- Bake them in the preheated oven for 15 minutes.
- Turn them over and bake them for an additional 10 minutes or until just golden.
- Sprinkle them with the seasoning mix and serve.
- To make the seasoning mix: in a bowl stir together the parsley, garlic, lemon zest, pepper and salt to taste.
