Best No Bake Cheesecake
- 1 (8 ounce) packet biscuits
- 100 g butter
- 300 ml double cream
- 200 g light cream cheese
- 1 lemon (rind and juice)
- 100 g icing sugar
- Base.
- Melt butter for base in a pan.
- Add crushed biscuits and combine.
- Place in base of loose based tin.
- Chill base in fridge for 20 minutes.
- Topping.
- Beat cream to until it holds it's shape, firm peaks.
- Fold in Philadelphia and icing sugar.
- Add lemon juice and rind and fold inches.
- Pour topping over set base.
- Set in fridge for a few hours or overnight.
- Add cool topping of choice.
- Turn out and serve.
- Enjoy!
