Ground Turkey Nachos
- 3 whole Roma Tomatoes, Chopped
- 1/2 cups Sliced Green Onions
- 2 whole Medium Garlic Cloves, Grated
- 3/4 teaspoons Kosher Salt
- 3 Tablespoons Canned Mild Green Chiles
- 1 pinch Unrefined Sugar
- 2 Tablespoons Butter
- 1 whole Small Onion, Diced
- 2 Tablespoons Dried, Minced Onions
- 1 pound Dark Meat Ground Turkey
- 1 teaspoon Kosher Salt
- 1/2 teaspoons Fresh Cracked Pepper
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 2 Tablespoons Taco Seasoning
- 1/4 cups Water
- 15 ounces, weight Canned Pinto Beans Rinsed And Drained
- 1 cup Shredded Extra-sharp White Cheddar
- 1 cup Shredded Smoked Sharp White Cheddar
- 12 ounces, weight Tortilla Chips
- Sour Cream, To Serve
- For the salsa: Add all ingredients to a medium bowl and stir to combine.
- Cover and refrigerate until ready to use.
- For the turkey mixture: In a 5-quart enameled Dutch oven, melt butter over medium heat.
- Add diced and dried minced onions and saute until soft, about 5 minutes.
- Add ground turkey and seasonings to onions and cook until meat is no longer pink, breaking up chunks of meat as needed.
- Drain meat and return to pan.
- Add taco seasonings and water to moisten meat; stir to combine.
- Add pinto beans to meat mixture and cook to warm up beans, about 5 minutes.
- Top meat mixture with both cheeses and place a lid on the Dutch oven.
- Allow meat to sit for 5 minutes to melt the cheeses.
- To assemble the nachos, put some tortilla chips on a plate and top with meat, salsa, and sour cream.
