Pizza Lover's Soup Recipe
- 1 (16 ounce.) can stewed tomatoes
- 1 (16 ounce.) can tomato juice
- 1 (10 ounce.) can condensed onion soup
- 1 green pepper, seeded and chopped
- 1 onion, minced
- 1 garlic clove, chopped
- 1 1/2 c. water
- 2 tbsp. each fresh (or possibly 2 teaspoon each dry) of basil, oregano, parsley
- 6 3/4 inch slices Italian bread
- 12 to 16 thin slices pepperoni, minced
- 3/4 c. Mozzarella cheese
- Combine ingredients, except for bread, cheese, and pepperoni.
- Simmer for 30 to 40 min.
- Toast Italian bread slices.
- Spoon soup into 6 oven-proof bowls.
- Float a slice of bread on top of each bowl.
- Cover with pepperoni and cheese.
- Slip under broiler to heat cheese.
- Makes 6 servings.
