Potted Herrings in Guiness
- 10 each herring fillets fresh
- 2 1/2 cups guinness
- 5 ounces vinegar
- 1 each onions cut into rings
- 2 each bay leaves
- 10 each cloves
- 4 each peppercorns
- 1 teaspoon brown sugar
- Wash herring fillets and roll up, starting from the tail.
- Place in a baking dish and add the stout-and-vinegar mixture.
- Add all other ingredients.
- Cover with baking parchment or foil and bake in a moderate oven at 350F (180C).for 20 minutes.
- Remove from oven, allow to cool, and serve/
