Lizzie's Cold Cucumber Soup
- 4 large cucumbers, peeled
- 12 teaspoon salt
- 12 teaspoon sugar
- 2 garlic cloves, crushed
- 12 teaspoon salt
- 5 pints plain yogurt
- 2 tablespoons fresh lemon juice
- 3 tablespoons fresh mint leaves, chopped
- fresh ground white pepper
- 2 tablespoons mint, chopped, as garnish
- Grate cucumbers and place in a colander to drain with the 1/2 tsp of salt for at least 30 minutes.
- Pour all ingredients into blender and blend until smooth.
- Pour into chilled soup tureen.
- Garnish with chopped mint.
- Serve very cold.
