Chimichurri Muy Perfecto
- 1 34 cups flat-leaf Italian parsley, chopped
- 1 cup olive oil
- 14 cup red wine vinegar
- 2 tablespoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1 tablespoon garlic, minced
- 12 teaspoon hot sauce (such as Tabasco)
- 14 teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- Combine all ingredients in a food processor, and process until the parsley is finely minced.
- Alternatively, place all ingredients in a mortar and pestle, and grind until a paste forms.
