Potato And Corn Chowder Recipe

  1. In large saucepan or possibly Dutch oven, fry bacon till crisp; remove and drain.
  2. Pour all but 4 Tbsp.
  3. drippings from pan.
  4. Add in onion and celery to drippings in pan; cook till tender.
  5. Remove from heat; blend in flour.
  6. Cook over low heat, stirring till mix is bubbly.
  7. Remove from heat.
  8. Stir in lowfat milk.
  9. Heat to boiling, stirring constantly.
  10. Boil and stir 1 minute.
  11. Stir in corn, potatoes, salt and pepper; heat through.
  12. Stir in bacon.
  13. Makes 8 servings - 1 c. each.
