Stir-fried Cassava Peel (KADEDEMES)
- 250 gr cassava peel (the pink)
- 3 red onions, thinly sliced
- 2 cloves garlic, roughly chopped
- 7 cayenne peppers (to taste)
- 1 chunk galangal, crushed
- 1 stalk spring onion, sliced diagonally
- 2 Tbsp oyster sauce
- to taste Sugar and salt
- Boil cassava peel until tender and soak in cold water for a while, drain and cut to taste.
- Saute onion, garlic, cayenne pepper and galangal until fragrant.
- Add cassava peel, oyster sauce, sugar and salt.
- Stir well and cook until flavors mingle.
- Shortly before finishing, add the leeks and stir well.
- Serve with salted fish fried to accompany warm rice.
