Sunshines strawberry champagne cake
- 1 1/4 cup champagne (any brand)
- 3 large eggs
- 1/3 cup vegetable oil
- 1 box white cake mix
- 1 quart (32.0z) heavey whipping cream
- 1 1/2 cup powder sugar
- 1 box vanilla pudding mix
- 3 tbsp strawberry daiquiri/margarita mixer
- 1 tsp vanilla extract
- 15 large strawberries divided
- preheat oven at 350F.and a 9" pan, i used a spring pan, spray pan with cooking spray.
- with an electric mixer ,mix frist 4 top ingredients together for 2 minutes.
- pour into pan, bake on 325F.for 50 minutes ......when cake is done, place on wire rack to cool completely.
- in a mixing bowl, mix the rest of the 6 ingredients to make whipped topping frosting .whip till stiff peak.on medium speed.
- this is with an electric mixer.
- chop 10 strawberries to a diced shape.the other 5 fan out the strawberrys.
- slice the cake into half in the center of the cake.top with some whipped cream mixture, top half layer with strawberry that are diced.,add the top part of the cake, spread the frosting ontop and around the cake, decorate as to your liking, i put the fanned strawberrys ontop,
- keep in refrigerator until ready to serve, when done serving place back in refrigerator.enjoy
