Cuatro-Peppered Goat Cheese Log

  1. Grind black, white, and green peppercorns and combine with caribe.
  2. Mix well.
  3. Spread pepper mixture on a sheet of waxed paper the same length as your cheese log.
  4. Roll cheese log in pepper mixture, coating cheese uniformly then roll log into parsley.
  5. Serve immediately with white crackers for spreading.
  6. OR wrap in plastic wrap and refrigerate up to 3 days.
  7. Bring to room temperature before serving.
