Cuatro-Peppered Goat Cheese Log
- 2 teaspoons whole black peppercorns
- 2 teaspoons whole white peppercorns
- 2 teaspoons dried green peppercorns or 2 teaspoons pickled green peppercorns
- 1 teaspoon northern New Mexico red chili (caribe)
- 2 tablespoons finely minced flat leaf parsley
- 6 ounces goat cheese (one log, Montracher preferred)
- Grind black, white, and green peppercorns and combine with caribe.
- Mix well.
- Spread pepper mixture on a sheet of waxed paper the same length as your cheese log.
- Roll cheese log in pepper mixture, coating cheese uniformly then roll log into parsley.
- Serve immediately with white crackers for spreading.
- OR wrap in plastic wrap and refrigerate up to 3 days.
- Bring to room temperature before serving.
