Spaghetti Quattro
- 1 pound Spaghetti Noodles
- 1 pound Ground Turkey
- 3/4 cups Olive Oil
- 1/4 cups Chopped Parsley
- 2 cloves Garlic, Minced
- 1 Tablespoon Red Pepper Flakes
- 1 can (16 Oz Can) Black Beans, Rinsed And Drained
- 1/2 cups Tomato Sauce
- 1 Tablespoon Kosher Salt
- 1/4 cups Freshly Grated Parmesan Cheese
- Cook the spaghetti to al dente in a pot of salted boiling water as per the package directions.
- While the pasta is cooking ... Brown the ground turkey in a large non-stick pan over medium high heat, making sure to break the turkey meat into small pieces with a wooden spoon as you go.
- Once the turkey is cooked, remove it to a plate and set aside for a minute.
- Add the olive oil to the pan and allow it to get hot (but not smoking).
- Then add the parsley and cook for about 30 seconds to a minute, until crispy but not browned.
- Add the garlic and red pepper flakes and cook for another 30 seconds, stirring constantly.
- Add in the cooked turkey meat, black beans, tomato sauce and salt.
- Stir and cook for about 2 minutes.
- Toss the cooked pasta with the sauce and serve.
- Top each plate with a sprinkle of Parmesan cheese.
