Cebu-Style Chicken Skewers with Vinegared Marinade
- 200 grams Chicken meat (whatever you like)
- 1/4 large one Onion
- 2 large cloves Garlic
- 2 Chili peppers (as desired)
- 1 tbsp Sugar
- 90 ml or (to taste) Vinegar
- 1/2 tsp Soy sauce
- 3 tbsp Ketchup
- Cut the chicken into bite-sized pieces, and mince the onion and garlic.
- Mix together the ingredients, and marinade all the ingredients together for at least 2 hours.
- Remove the chicken only and pierce with damp skewers.
- Place on a baking pan covered in aluminium foil.
- Take the marinade, put it in a pot, and boil it about halfway down.
- Pour the sauce from the previous step over the meat, and cook by grill, frying pan, over toaster, or a 200C preheated oven.
- When necessary (like when cooking in a frying pan), occasionally turn over to allow the chicken to cook through evenly and thoroughly.
- Today I used chicken breasts and liver and baked in the oven.
- I used long BBQ skewers.
- If you have the sour and spicy vinegar they have in Cebu, you can use that.
- You can also use the pickled garlic and chili peppers.
