Cebu-Style Chicken Skewers with Vinegared Marinade

  1. Cut the chicken into bite-sized pieces, and mince the onion and garlic.
  2. Mix together the ingredients, and marinade all the ingredients together for at least 2 hours.
  3. Remove the chicken only and pierce with damp skewers.
  4. Place on a baking pan covered in aluminium foil.
  5. Take the marinade, put it in a pot, and boil it about halfway down.
  6. Pour the sauce from the previous step over the meat, and cook by grill, frying pan, over toaster, or a 200C preheated oven.
  7. When necessary (like when cooking in a frying pan), occasionally turn over to allow the chicken to cook through evenly and thoroughly.
  8. Today I used chicken breasts and liver and baked in the oven.
  9. I used long BBQ skewers.
  10. If you have the sour and spicy vinegar they have in Cebu, you can use that.
  11. You can also use the pickled garlic and chili peppers.
