Grilled Sweet Potato and Blue Cheese Sandwich
- 2 whole Sweet Potatoes, Peeled And Sliced Into 1/4 Inch Rounds
- 1 Tablespoon Olive Oil
- 8 slices Artisan-style Bread
- 4 Tablespoons Unsalted Butter
- 2 Tablespoons Honey
- 1/2 cups Fresh Spinach Leaves
- 1/2 cups Blue Cheese, Crumbled
- Preheat oven to 350 degrees F.
- Peel and slice sweet potatoes and place in medium bowl.
- Drizzle with olive oil and toss to coat.
- Place on 9x13 cookie sheet and bake for 15 minutes.
- The sweet potatoes should be softened.
- Meanwhile, butter one side of each slice of bread.
- For each sandwich, place buttered side facing down on surface.
- Drizzle 1/2 teaspoon honey onto one side of bread.
- Top with one layer of spinach leaves, 2 to 3 rounds of sweet potato, and crumbled blue cheese.
- Top with bread.
- Place 12-inch cast iron skillet or nonstick skillet on stovetop and heat on medium-low until a drop of water sizzles.
- Place sandwich in skillet and grill for approximately 1 minute.
- Carefully flip sandwich and grill until golden brown and crispy.
- Slice and serve.
