Easy Fish Bake
- 1 (10 3/4 ounce) cancondensed cream of shrimp soup
- 34 cup water
- 2 teaspoons lemon pepper seasoning
- 1 (10 ounce) package frozen peas and carrots, thawed
- 1 12 cups uncooked instant rice
- 1 lb fresh white fish fillet, 1/2-inch thick (cod, haddock, halibut, tilapia)
- Preheat oven to 375 degrees F.
- Mix soup, water,1 teaspoon of lemon pepper, carrots, peas, and rice in a shallow 2-quart baking dish.
- Top with fish, cutting to fit.
- Sprinkle fish with remaining lemon pepper.
- Bake in preheated oven for 25 minutes or until fish flakes easily when tested with a fork.
