Chicken and Ham Lemon Soup
- 1 lb. boneless skinless chicken breasts
- 2 cups water
- 1 bay leaf
- 1 clove garlic, chopped
- 3 cups chicken broth
- 1/2 cup wild rice
- zest and juice of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- 1 cup chopped OSCAR MAYER Deli Fresh Smoked Ham
- 20 dino kale leaves, rinsed, ribs removed and torn
- 1 lemon thinly sliced in rounds Safeway 4 ct For $5.00 thru 02/09
- In a large pot, combine water and chicken over medium heat.
- Cook for 15 minutes or until chicken is tender.
- Remove from heat.
- Remove chicken from broth and let cool.
- Reserve broth.
- Strain chicken broth into a 5-quart stock pot.
- Heat over medium heat.
- Add bay leaf, salt, garlic, 3 cups chicken broth, rice, lemon zest and lemon juice.
- Cook for 10 minutes.
- Shred chicken breast and add to soup.
- Add ham.
- Cook for 5 minutes more.
- Remove soup from heat, stir in kale, lemon slices and serve.
