Chicken and Ham Lemon Soup

  1. In a large pot, combine water and chicken over medium heat.
  2. Cook for 15 minutes or until chicken is tender.
  3. Remove from heat.
  4. Remove chicken from broth and let cool.
  5. Reserve broth.
  6. Strain chicken broth into a 5-quart stock pot.
  7. Heat over medium heat.
  8. Add bay leaf, salt, garlic, 3 cups chicken broth, rice, lemon zest and lemon juice.
  9. Cook for 10 minutes.
  10. Shred chicken breast and add to soup.
  11. Add ham.
  12. Cook for 5 minutes more.
  13. Remove soup from heat, stir in kale, lemon slices and serve.
