Mozzarella Meatloaf

  1. Combine ground beef, bread crumbs, egg, onions, seasonings, green peppers, and 3/4 cup tomato sauce in a bowl, mixing well.
  2. Pat meat mixture into a 9x13 inch rectangle on waxed paper.
  3. Sprinkle with cheese and mushrooms.
  4. Roll, as you would a jelly roll, sealing the edge and ends.
  5. Place seam side down in an 8x12 inch (9x13 works just fine) baking pan.
  6. Bake at 375 degrees for 30 minutes.
  7. Pour off drippings, pour remaining tomato sauce over the loaf, then bake for 30 minutes longer.
  8. Notes:
  9. Many times I have left out the regular salt and just used seasoning salt and vice versa.
  10. Having both in there makes it just a little too salty, but Im not one who likes salty food.
  11. I usually switch out the tomato sauce with pizza sauce or spaghetti sauce (at different times, obviously) with great results!
  12. Our favorite is to use spaghetti sauce, as the plain tomato sauce is just too much tomato and not a lot else.
