Starlight Cupcakes

• 2 cups flour, all-purpose
• 1 1/2 cups sugar
• 3 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1/2 cup vegetable shortening (half margarine or butter, if desired) softened
• 1 cup milk
• 1 teaspoon vanilla extract
• 3 large eggs

1. Heat oven to 350F (180C) degrees.
2. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly for 30 seconds.
3. Beat on high speed, scraping bowl frequently for 3 minutes.
4. Pour batter into paper-lined medium muffin cups, filling each about half full.
5. Bake 20 minutes.
