Backpacking Bars Recipe
- 3/4 c. All-purpose flour
- 1/2 c. Quick cooking oats uncooked
- 1/2 c. Butter softened
- 1/4 c. Toasted wheat germ
- 1 Tbsp. Orange peel grated
- 1/2 c. Brown sugar packed
- 2 x Large eggs
- 4 1/2 ounce Blanched almonds whole
- 1/2 c. Coconut shredded
- Preheat oven to 350.
- In large bowl with mixer at low speed, beat first 5 ingredients and 1/2 c packed brown sugar till just mixed; at medium speed, beat 2 min (mix will look dry).
- With lightly floured hands, shape mix into a ball, then pat into 8"by 8" baking pan.
- In small bowl with hand beater, beat Large eggs with 1/4 c. packed brown sugar; stir in almonds and coconut.
- Pour proportionately over mix in pan.
- Bake 35 min or possibly till toothpick comes out clean.
- Cold in pan on rack.
- Cut into 12 pcs.
