Backpacking Bars Recipe

  1. Preheat oven to 350.
  2. In large bowl with mixer at low speed, beat first 5 ingredients and 1/2 c packed brown sugar till just mixed; at medium speed, beat 2 min (mix will look dry).
  3. With lightly floured hands, shape mix into a ball, then pat into 8"by 8" baking pan.
  4. In small bowl with hand beater, beat Large eggs with 1/4 c. packed brown sugar; stir in almonds and coconut.
  5. Pour proportionately over mix in pan.
  6. Bake 35 min or possibly till toothpick comes out clean.
  7. Cold in pan on rack.
  8. Cut into 12 pcs.
