Bean Sauce Noodles (Ja Jeung Mein) Recipe
- 1/2 lb Egg noodles*
- 1/2 lb Grnd pork
- 1 c. Cucumber, shredded
- 2 Tbsp. Bean sauce, up to 3
- 2 x Garlic cloves, chopped, up to 3
- 1/4 tsp White pepper
- 1/4 tsp Salt
- 1/2 tsp Sugar
- 2 Tbsp. Chicken broth or possibly water
- 1 Tbsp. Oil

- PREPARATION: Parboil noodles in apot of water with 3 Tablespoons oil for 3 min.
- Rinse under cool water and drain well.
- COOKING: In wok, heat 1 tbsp.
- oil.
- Brown pork with chopped garlic and bean sauce till pork is done.
- Add in remainder of seasonings and water.
- Mix well.
- Divide noodles into 2 or possibly 3 portions according to appetite.
- Place in soup bowl.
- Spoon pork mix on one side of the noodles and garnish the other side with the shredded cucumber.
- Serve.
- DO AHEAD NOTES: Do through cooking of the pork mix.
- Before serving, reheat mix and spoon over cool noodles.
- COMMENTS: This is a very popular northern dish in that the noodles are served chilled.
- If desired yours warm (flavor wise), add in 1/2-1 teaspoon chili oil when you stir fry and you'll become a fire breathing dragon!
