Maple-Pear Roasted Pork Tenderloin

  1. Preheat oven to 375 degrees F.
  2. Coat a shallow roasting pan with cooking spray.
  3. Season pork all over with salt and black pepper.
  4. Transfer pork to prepared pan.
  5. In a blender or food processor, combine pears, Dijon and maple syrup.
  6. Puree until smooth.
  7. Pour mixture all over pork in pan.
  8. Roast 25 to 30 minutes, until a meat thermometer reads 140 degrees F. Let pork rest 10 minutes before slicing crosswise into 1/2-inch slices.
