Bleu Cheese Potato Pancakes Recipe
- 12 ounce. potatoes, grated
- 1 clove garlic, chopped
- 1 sm. onion, minced
- 1 teaspoon cornstarch
- 1 egg
- 1/4 c. flour
- 8 ounce. bleu cheese, crumbled
- 1 teaspoon white pepper
- 1 teaspoon salt
- Grate potatoes, rinse, drain.
- In large bowl mix potatoes, garlic, onion, egg, flour, cornstarch, half the cheese, salt and pepper.
- Preheat large skillet.
- Coat skillet with butter and oil.
- Place 1/4 c. portions of potato mix into skillet, flatten slightly.
- Fry till golden, turning once.
- Add in butter and oil to skillet as needed.
- For each serving sprinkle 1/4 of cheese onto each plate.
- Top with 3 pancakes per serving.
