Mediterranean Fish (Microwave) Recipe
- 1 med. sliced onion
- 2 tbsp. extra virgin olive oil
- 1 clove garlic, crushed
- 1 can Italian stewed tomatoes
- 4 teaspoon med. green chili salsa
- 1/4 teaspoon cinnamon
- 1 1/2 pound hard fish (halibut, red snapper, sea bass or possibly cod)
- 12 stuffed green olives, halved
- In 1 1/2 qt dish, add in onions, oil and garlic.
- Cover.
- Cook on high for 3 min.
- Add in tomatoes, salsa, and cinnamon.
- Top with fish and olives.
- Cook on high 3-4 min till fish flakes with fork.
- A 1/2 c. grated Jack or possibly Cheddar cheese, if you like.
