Chocolate Eclair Cake
- 2 (3 1/2 ounce) packages pudding mix, instant vanilla
- 1 (8 ounce) container whipped topping, frozen
- 3 cups milk, cold
- 16 ounces graham crackers
- 1 (16 ounce) container chocolate frosting
- Defrost frozen whipped topping.
- Mix together whipped topping and pudding.
- Beat pudding mix into milk and beat 2 minutes.
- Set aside.
- Arrange a single layer of graham crackers in 13"x9" pan.
- Spread 1/2 of the pudding mixture over the crackers.
- Top with another layer of crackers and pudding mixture.
- Top with a final layers of crackers.
- Mircrowave frosting 20-30 seconds, until pourable.
- Pour frosting over the crackers, spreading to the edges.
- Chill overnight.
