Pork Chops in Tomato Artichoke Sauce
- 1 Tablespoon Olive Oil
- 6 whole Boneless Pork Chops
- 1 whole Green Bell Pepper, Chopped
- 1 whole Onion, Chopped
- 2 cans Stewed Tomatoes
- 1 can Quartered Artichoke Hearts
- 1 cup Chicken Broth
- 1/2 cups Half-and-half
- Brown pork chops in olive oil, set aside.
- Saute pepper & onion till soft.
- Add tomatoes, artichoke hearts, broth & half and half.
- Return chops to pan.
- Simmer 40-60 minutes.
- Serve with angel hair pasta.
