Bananas Foster
- 2 medium bananas
- 1/4 cup (1/2 stick) butter or margarine
- 1/2 cup firmly packed light brown sugar
- 1/2 tsp. ground cinnamon
- 1 tsp. vanilla
- 2 Tbsp. rum
- 1 pt. vanilla ice cream, divided
- 1/2 cup thawed COOL WHIP Whipped Topping, divided
- Peel and cut bananas in half lengthwise.
- Cut each piece crosswise in half; set aside.
- Melt butter in large heavy nonstick skillet.
- Stir in sugar and cinnamon; cook on medium heat until sugar is melted.
- Stir in vanilla.
- Add banana pieces, cut sides down, to skillet.
- Remove from heat; stir in rum.
- Reduce heat to medium-low; cook 3 to 5 min.
- or until bananas are evenly coated and tender, basting occasionally with the sauce.
- Spoon 1/2 cup ice cream into each of 4 dessert dishes.
- Top each with 2 banana pieces.
- Drizzle evenly with sauce.
- Top each serving with 2 Tbsp.
- whipped topping.
