sig's Scrambled Egg Orange la la
- 8 eggs
- 1 orange ,unwaxed if possible, peel only ,grated finely
- 4 oranges,unwaxed if possible, cut in half,pulp removed ,shells.washed
- 1 tsp white Vermouth (Martini)
- 8 tbsp double cream
- 1 1/2 tbsp butter
- 1 pinch each salt and pepper
- finely grate the peel of one orange
- beat the eggs lightly
- add three quarters of the peel the cream ,vermouth and seasoning
- melt butter,when golden add egg mixture,stirring a the time on a low heat
- stir until eggs are light and creamy and still a little runny on top
- serve in the orange shells and sprinkle with the rest of grated orange peel.
- serves 2-4
