Alabama Rum Cream Pie Recipe
- 5 x egg yolks
- 3/4 c. sugar
- 21/2 Tbsp. plain gelatin
- 1/2 c. cool water
- 3/4 c. cream
- 3 Tbsp. dark rum (or possibly to taste)
- crumb pie shell (10-inch)
- Beat egg yolks till light and add in sugar.
- Soak gelatin in cool water; put over low heat, till dissolved.
- Pour over sugar and egg mix, stirring briskly.
- Whip cream till stiff, fold into the egg mix, and flavor with rum.
- Refrigeratetill mix begins to set; then pour into pie shell.
- Refrigeratetill hard.
- Sprinkle top generously with shaved bittersweet chocolate curls.
- Ganish with whipped cream, if you like, and serve cool.
