Sweet Crabby Cakes

• 3 tablespoons pancake mix
• 1 tablespoon yellow mustard
• 3 tablespoons mayonnaise
• 1 egg
• 1 teaspoon dried parsley
• 1 lb cooked and flaked crabmeat
• 2 12-3 cups vegetable oil

1. In a bowl, mix together pancake mix, mustard, mayo and egg.
2. Fold in parsley and crab.
3. Form into 7 patties.
4. Heat oil in large frying pan.
5. Carefully place patties in hot oil.
6. Fry 8 minutes per side until golden brown.
7. Drain on paper towel lined plate.
