Sweet Crabby Cakes
- 3 tablespoons pancake mix
- 1 tablespoon yellow mustard
- 3 tablespoons mayonnaise
- 1 egg
- 1 teaspoon dried parsley
- 1 lb cooked and flaked crabmeat
- 2 12-3 cups vegetable oil
- In a bowl, mix together pancake mix, mustard, mayo and egg.
- Fold in parsley and crab.
- Form into 7 patties.
- Heat oil in large frying pan.
- Carefully place patties in hot oil.
- Fry 8 minutes per side until golden brown.
- Drain on paper towel lined plate.
