Pear Galettes with Vanilla Cream

  1. Peel, core and slice pears keeping attached at the stem end.
  2. Place each onto a square of pastry, fanning out at the base.
  3. Brush each pear and pastry with the egg white, sprinkle with sugar and bake on a lined oven tray at 200 degrees C for 15 minutes, or until golden and pear is tender.
  4. Mix together the Philly*, cream, sugar and vanilla until smooth.
  5. Serve galettes warm with Philly* cream.
