Roasted Garlicky Basil and Lemon Zest Chicken
- 4 tablespoons basil leaves, freshly chopped
- 2 tablespoons lemon zest freshly grated
- 3 cloves garlic or to taste, crushed
- 3 1/2 tablespoons olive oil
- 2 each chicken breasts fillets, skin on and wingtip attached, trimmed, 500 grams
- 2 each zucchini sliced
- 9 ounces cherry tomatoes 250g
- 5 tablespoons basil leaves, plus more for serving
- 1 x lemon wedges, to serve
- Preheat oven to 220C (425F).
- Add the basil, lemon zest, garlic and oil in a large bowl and stir to combine.
- Add the chicken breasts and zucchini in the large bowl, and mix until well coated.
- Arrange the well coated chicken breasts and zucchini slices on a baking sheet..
- Roast for about 10 minutes.
- Put the tomatoes on the baking sheet and roast for another 5 minutes or until the chicken is completely coked.
- Place extra basil leaves on top and serve with lemon wedges.
